Coffee from Chiapas, the southernmost state of Mexico, is known for its rich body, bright acidity, and a sweet nuanced flavor. Grown in the high-altitude mountains of the Sierra Madre de Chiapas, this coffee benefits from ideal conditions: volcanic soil, plentiful rainfall, and shade-grown cultivation.

Many Chiapas coffees are organically grown by smallholder farmers, often with indigenous roots, and harvested by hand. The region’s proximity to Guatemala means it shares some of the same high-quality characteristics found in neighboring Huehuetenango coffees.
